Achy Wednesday

Ugg!  My shoulder hurts. My hand hurts. My knuckles are scraped. Should I have iced the shoulder when I got back from my run this morning? It’s just bruised but I don’t know if you ice a bruise?  Oh well. Note to self: pay attention to your feet when running in the dark!

If you’re wondering what happened to Ted in court yesterday, well it was nothing… literally.  He went early to find a note on the door: “CLOSED. CALL ###-#### TO RESCHEDULE”.   What can you do?…this isn’t the Big City!  So he went shopping instead and bought pizza among other things. Did he share?! No!!! Shane and I went hungry.  So anyway, he called the number today, and the message was “Please call back between 8AM and 2PM”.  Whoops! Ditched the law again.

As for today, work was busy.  Didn’t make the couple of stops I was suppose to but there is always tomorrow.  This morning a sales rep. stopped by with muffins!  He was so sweet, he included 2 whole wheat muffins just for me!  Awwww!   However, I didn’t get to enjoy them because I had to get out and make a few stops.  Of COURSE they won’t be there tomorrow… in fact, it was reported that they disappeared by 10AM! 9659

Tomorrow I have a meeting with a gent. from a company that will help us determine where the shop might make “Greener” choices.  I’m looking forward to the meeting.  It’s amazing how much I’m seeing this Eco-conscious effort among companies and individuals now in magazines and on the web. It’s great!  I do want to see what LEED is all about (Leadership in Energy and Environmental Design program at www.usgbc.org. It provides guidelines on environmentally friendly buildings.9624

As for dinner, it’s going to be a concoction of shrimp and bay scallops.  Here’s the ingredients:

14 raw shrimp (deveined, shelled), 1/2 lb bay scallops:  You will want to let these sit in about 2 TBS lemon juice while you prepare the following:

16 cherry tomatos (1/2’d), 1 6oz jar marinated artichoke hearts; 1 4oz jar pimentos, 1 18oz container Italian basil&garlic soup, about 4-5 chopped hot cherry pepper slices (NOT WHOLE PEPPERS! WOW!), and 4 oz sliced baby bella mushrooms.

1 small head of cauliflower which you will cut up, rinse with salted water, cover with clean water and bring to a boil until tender = about 10-15 min. Turn to simmer after 6-8 min. of boiling.

Bring tomato soup to a boil and add all ingredients except mushrooms, shrimp and scallops.

Bring down to a simmer and stir in mushrooms. Simmer about 5 min. Add shrimp and simmer, covered for 2 min. Add bay scallops and continue to simmer another 3-4 minutes covered until shrimp and scallops are opaque.  Serve over your cooked cauliflower and we added green beans as well.

There was an email today from a baking site which is doing a Halloween cake contest. So that will be my weekend project. I’ll get the cake baked and come up w/ a design. Then put it together next weekend and possibly offer it to one of my customers with lots of kids.  It should be fun!9964
