Can you believe my husband was hoarding wine given to us by friends?!  My, my, my. You live with someone for so long and they STILL surprise you.  Nancy and Bob gave us this wine which we cannot wait to open… probably next Friday for our tradish happy hour:

While I was thinking of what to do about dinner, I was feeling snacky. Now in my mind, there is something safer to snack when it’s broken rather than whole, so this is what I found from the bag of the yummy honey pretzel rods left from the other day:  sunday-nov-30-006

 

On to dinner… we are having salmon. You will most likely cringe when you read the ingred. to my marinade but I was feeling a chocolate craving and, as I always believe…go with it:

  • .75 lb salmon fillets
  • 2 tsp black cherry concentrate (doesn’t chocolate go with black cherry????!!)
  • 1/2 tsp minced garlic*
  • 2 TBS lemon juice
  • 1 TBS cocoa powder
  • 1 tsp brown sugar
  • 1/4 tsp ground cloves (I actually wanted cardemom powder but I didn’t have any so I thought what else strikes me as going with chocolate?… clove!)

Spread olive oil in bottom of pan and preheat oven to hi broil, shelf set about 4 inches from burners. Let salmon sit in marinade for about 30 minutes and broil 4 min per side, skin side up first.  When I turned the salmon over, I added 1/2 tsp each fillet, dried cherries.

I served this with cauliflower sauteed with leftover chopped green beans.  Just boiled cauli. til softened, approx. 10 min. Drain and add chopped beans to pan, salt and pepper to taste, saute abut 8 min.

*Just to let you know if you didn’t know already, if a recipe says  “1 tsp garlic, minced” that is a different measurement than ” 1 tsp minced garlic”.  The first means to take 1 tsp of garlic and mince it.  The second means to MINCE garlic to make 1 tsp.  …get the difference?

Good Morning!  We went for a wonderful walk this morning around Ted’s Alma mater, Proctor High School. We went down by the park where Shane and I continued around but Ted headed home due to a sore foot. Played frisbee a little then we saw a big black Newfy enter the park and packed up the fun.  Probably a good 4.5 miles. I wasn’t wearing my Garmin. Quickly downed 1/2 an orange upon returning since I didn’t even have a sip of water before we went out.

This mornings breakfast was, yet again, a weekend omelet. This one was a Broc-Slaw Omelet and consisted of the following:

  • 1/2 TBS olive oil for the pan
  • handful of broccoli slaw
  • 2 tbs chopped onion
  • 3 tbs chopped green pepper
  • about 3/4 tsp Cajun spice
  • 3/4 cup egg beaters
  • 1 oz feta cheese
  • 1 tbs salsa and sprinkles of hot sauce

I put the cooked omelet on top of a home made english muffin. That reminds me, enough bread already! I have been eating bread like it was going out of style over the past 4 days!  Not even the healthy kind.  
We also shared a Protein Shake: 6 strawberries, 1 scoop VPX, 1/2 tsp vanilla, 1/2 cup nonfat soy milk, lots of ice and water.

Blurring Vision

Oh – I hate these contacts! I wear the CRT lenses ….you put them in at night, sleep in them and it corrects your vision overnight. But my eyes are sore and blurred tonight. That’s my excuse for poor spelling.

We went to see a Utica College Hockey game tonight with friends: Rocko, Jackie, Bob, Nancy. It was great fun. photo1-3   Then we all went on to Cavallo’s for dinner.  I didn’t take many pics since I was playing with my new phone and trying to figure it out. You’ll be happy to know that I haven’t included the 5 to 6 pictures of the floor, the seats, my leg, my foot…..Geesh! I hate new technology!  Back to dinner… Ted had the yummy (if you eat meat and high calories) Cavallo’s Signature Tunnel sandwich which was sausage, meatballs, sauce on a huge roll covered with mozzarella:  photo1-2

My dinner was Haddock Francaise which wasn’t too bad except very greasy looking. My stomach would have been very vocal if I had engaged in all that grease, so I dissected it slightly by removing the topping.  The picture is pre-dissection:

photo1Also note the veggie bowl.  The waitress told me “a steamed vegetable”… sorry…didn’t believe it when I saw the CANNED MIX! 

I don’t mean to sound displeased, because it really wasn’t bad and the company actually made the dinner extra special.

My eyes are winning this fight, I’m going to give in. Hope you have some really pleasant dreams…good night.

Wakin and Shakin

Good morning, All!  Shane and I began our day with a really enjoyable 6.3 mile run. That put the running miles weekly total at just 25 miles.  I like to keep it between 21 – 25 miles per week right now.

I decided on a Tofurky Omelet this morning: 

  • tofurky-omelet-001Here are the players in this 1 Act Play: 
  • 3 Large cherry tomatoes, sliced.
  • 1/2 green pepper, sliced.
  • 2 TBS chopped onion
  • 1 small pc. Tofurky, chopped

  • snipped chives
  • about 1 oz blue cheese crumbles

Put about 1/2 TBS olive oil in fry pan and heat on med-hi.

Add veggie mix. Saute 1 min. Add Tofurky and chives. Cook about 3 min. Add E/Beaters and turn heat to med.  In about 2-3 min. gently pick up sides of omelet to let loose eggs get underneath to meet the heat of the pan. Sprinkle on cheese, turn off heat, fold omelet, let cook an additional 1 minute. Turn onto plate.  I topped the omelet with a few shakes of hot sauce and 1 TBS salsa. It sits on top of a homemade english muffin.

  Now Shane and I are off to AT&T to get a new cell phone, Peter’s Cornucopia for some wholesome foods.

All you experienced bloggers, I have to ask, where do you begin with a food and drink blog when the entire day was filled with so much activity and fun, you find it hard restraining your typing fingers to a simple discussion of good food?!  Guess you just have to be selective.  So, in a large nut shell, I present Thanksgiving Left Over Party notes.

On the dessert table, my favorite table to prepare, we have, chocolate mint mini pies, cake truffles, chocolate mocha cheesecake (Teddy - don't you wish you were here?!), apple crumble pie, lemon treacle tart, chocolate chip and leaf cream cheese cookies, million dollar peanut butter cookies (reminder! - check that recipe out on the Pillsbury site for the Bake off 2008).

For the main dinner, we had Roast Turkey, Tofurky (not pictured), Giblet gravy, whole berry cranberry sauce, Sourdough Apple Stuffing, Red-White Bean 6 Cheese Lasagna (check out recipe soon to be posted), orange essence green beans, wild mushrooms and sauteed spinach, Pear and Blue Cheese Salad (recipe will be posted), Oven Roasted Potatoes with Rosemary and Garlic (recipe to be posted), rolls, and shrimp.

Began the day with a full stomach so I made use of it and did 35 minutes of mixed aerobics and a quick shoulder workout.  Shane and I went for a walk then we played a little frisbee in the track field.

Back track a bit… why I have a full stomach is because at about 7:30 PM I had a snack attack. Instead of picking here and there, I decided to make a healthy salad. Healthy in portion size and ingredients.

  • 1 1/2 cups mixed salad greens.
  • 1/4 cup black eyed peas
  • 1 oz feta cheese
  • 2 tbs Annies F/F Raspberry Vinaigrette.

It did the trick with the fiberous ingredients for fill as well as a little sweetness from the dressing.  I followed up with a nice warming cup of Vanilla Carmel Truffle Black Tea:

Even though that was a big “snack” and I simply went to bed an hour after eating it, I still had the stomach power to make a delicious, breakfast omelet.

  • 1 cup chopped spinach
  • 3 sliced cherry tomatoes
  • 1 slice of hot cherry pepper, diced
  • 1 oz Feta cheese
  • 3/4 cup Egg Beaters
  • 1 Ezekiel Pita Pocket, toasted
  • salt and pepper to taste
  • Topped with sprinkles of hot sauce and 1TBS Salsa

For my fruit, I added 1/2 a grapefruit on the side and a wonderful cup of coffee, sweetened with my favorite, Stevia sweetener.

The rest of the day entails more food preparation and the enjoyabe company of friends.  Unfortunately, Richard had to leave early and won’t be with us this afternoon as he is having a problem with his foot and needs more medicine from home.  We’ll miss his company.

UPDATE:  FOR FAMILY THANKSGIVING FUN, SEE “FUN PICS” page, “Family Thanksgiving 2008”.  Where to begin..where to begin?  I’ll start with this morning and work back to an exciting night. But first…HAPPY THANKSGIVING!!!!

My mind was racing this morning at 4:30 but I absolutely refused to get up because we stayed up last night to watch “The Hulk” dvd.  It wasn’t bad. I was the only one who didn’t “cat nap”.  So I tossed and went through thousands of thoughts before finally getting up at 6 AM.  Ted got up as well and we were able to get the big bird in the oven in no time. Shane and I then embarked on our own personal “Turkey Trot” of 3.5 miles.  Up to this point, at 9AM, I have got the rolls rising, the biscuits waiting to be baked, bread being prepared in the bread maker, noodles for lasagna cooked.  …. and she’s still going! 

I thought I better sit, have some cream of rye with 1 tsp apple pie spice and 1 tsp raisins. I also finished off Shane’s peanut butter and added that as well.  He has the all natural kind, nothing but roasted peanuts:

run-for-safety-0131The rest of the agenda today is: 1. Make the salad for Sue and Sam’s and take all baked breads up to their house for the big dinner. 2. Assemble the lasagne and refrig. for cooking tomorrow. 3. Make sourdough stuffing and refrig. for tomorrow. 4. Defrost desserts and finish for tomorrow.

So Friday AM, I can take it easy and at about 10 AM begin cooking and warming! Easy- breezy!

Now, I am SO excited to let you in on last evening.  As you know, I did the Run for Safety. Well, SURPRISE! Shane and Ted met me down there. run-for-safety-014 In my excitement, I cut Ted’s head off.  Guess who else we met up with?!  Remember the Valley View GC experience with the dog Randy?  Well, we introduced ourselves to Linda – Randy’s owner! 

run-for-safety-001Look how reflective I am!   Linda said they actually found Randy in the Golf Course as a stray and she’s a good dog. 

The run itself was great in spite of it being a wet and cold night.  As we began, there were no lights, so I attached myself to the group in front that were carrying a flashlight. They ended up going the wrong way for about 1/4 mile – it was too funny!   So we all played catch up and soon were in the front again. 

The lights were beautiful!  Here are only a few and there is NO WAY you can appreciate their illuminations by my poor picture taking, but try to get the idea:

Now this is the Hero Light which C-Flex contributed to in honor of our employee, my stepson, Ted and Johanna’s dear son, Pam and Angela’s brother who is currently serving with the Marines in Iraq.

It was beautiful. The flag was made to “wave” with the lights.  

So, what a GREAT run and what major fun! 

When  I got home, it was rush, rush, rush. I had to finish the baked goods order and get it to Bonnie before going to dinner with Richard, Debbie and Eddie.  Here is the finished product and I will be posting a separate page to take you through the steps  I use for cake decorating. You might really find it interesting and surprisingly easy.

Now a little about this cake. It is a chocolate cake with Cannoli filling.  It is partially basket weaved in 4 places on the sides with “plaques” offering different Thanksgiving Wishes.  The top is covered with chocolate covered strawberries (I showed you the other night), chocolate and candied leaves, cake truffles, and any gaps were filled in with brown/white frosting.  I’m calling it my “MARISSA CAKE” because the young daughter of the family who places numerous “Apple Crumbles” orders, enjoys chocolate covered strawberries. I wrote “Happy Thanksgiving” in candy chocolate coating in the box.

Following that bit of rushing around, we were able to meet Debbie and Eddie at Ventura’s Restaurant.

Ok… I still had “runner’s do” because I didn’t have time to wash it – please forgive?!”

I had the broiled seafood platter – minus the FROG LEGS, thank you very much!  They put some truly hormonal mussels on the plate – just way to big for me to eat (gross!).  run-for-safety-012 I had a side of steamed broccoli and a glass of Pinot Noir – not the best but it hit the spot. Ted had “Veal Ventura” with a glass of Chianti….he had 2 glasses!  Debbie, unfortunately had to send her trout dish back and decided on shrimp scampi instead. They were very accommodating and apologetic at the restaurant.

So that’s a wrap!  … and HAPPY THANKSGIVING!!!! See you guys later, after our bellies are full.
