 Accomplished quite a bit today. Did 3 loads of laundry plus Shanes bed. Grocery shopped.  Put some clothes away.  Baked the Apple Crumble pies to upload the picture on the recipe page, which I noticed was messed up so that’s been corrected and now you can see the recipe and picture of the pies. I’ll save them for Thanksgiving because they do freeze quite well.

 Gluten Free Brownies  I made something quite different today. Gluten Free Chocolate Brownies.  I mentioned earlier that I was going to try G/F chocolate cake, but I changed the recipe and they turned out like brownies.  Ted loves them and has so far eaten about 1/2 the batch. Check out the recipe page.  Note to Pam:  Your dad and I think this is a recipe you will enjoy!

Also made Cranberry Banana Breads. They are cooking right now so I will upload the pic in the recipe page later.  You will notice there is 1/2 tsp orange peel in the recipe. Well, I messed up when mixing the batter and grabbed the lemon peel instead.  I’m keeping my fingers crossed that it is not too detectable but am most certain the recipe would be better w/ the orange.

Tomorrow, I will make Zucchini bread and that always comes out SUPER good. I add pineapple to it!  Also, there is about  1 cup of chopped cranberries left over so I’ll probably get inventive and use those as well.  Stay tuned!

Shane and I went for a 6 1/2 mile run this Sat. morning.  We were out the door by 6Am and the planned route was past the business park up the road that runs parallel to it – obv. forgot its name.  As we passed the Masonic home, the street lights were pretty scant, so we headed toward the post office.  It was quite an obstacle course and not one recommended in the dark.  We had to stay clear of on coming buses and smelly garbage trucks, cars with sleeping drivers… it was nasty out there!  We headed back down Culver and turned toward MVCC from the apartments.  There was a big, white cat in the middle of the pavement and I thought it would definately take off. It didn’t. It got up and did a big, vicious cat stretch – tail right in the air! Neither Shane nor I wanted to mess with that kind of a threat (darned halloween cat!). We ran to the other side of the street.  The run was pretty good, slow and easy until we got to the entrance of MVCC where a pot hole snuck up on me. I twisted my ankle.  Never done that before – I usually just fall flat on my face and walk around with various parts of my body being black and blue.  The ankle seems ok now. I’m blessed with strong ankles and a lot of flexibility so I may have avoided a nasty sprain.  We’ll see by tomorrow.

When we got home, I gave Shane a shower (every 2 weeks we get him squeaky clean), washed his bedding, and put a load of our own laundry in.  We are off to a very productive start.  I intend to make a Gluten Free Chocolate Cake today… if it comes out good, it will be on the Recipe page.  Also, I am making the Apple Crumble Pie so I can upload a pic. to that recipe. Thought I had one but so far no success locating it.

So today’s post run breakfast:  Weekend Omelette.  Make sure to check it out on the recipe page. It certainly is not for the “bird” like eater. It’s more of a “Hungry Mans” (in this case, woman’s) breakfast.  Note the piece of spinach roll?  That was SOOOOOO delish!  Ted bought it yesterday for Steve and Angela’s visit.   Yum!

This breakfast consists of: 3/4 c Egg Beater omelette made with broccoli, asparagus, tomatoes, mushrooms, onions, goat cheese. Finished with a few sprinkles of hot sauce. Accompanied by 1 pc. Ezekiel Sprouted 100% Whole Grain bread(toasted), 1 pc. of spinach bread (didn’t need but couldn’t resist a nibble) and coffee.  In my coffee I use stevia and Silk soy creamer.
