Good morning, All! Shane and I began our day with a really enjoyable 6.3 mile run. That put the running miles weekly total at just 25 miles. I like to keep it between 21 – 25 miles per week right now.
I decided on a Tofurky Omelet this morning:
- Here are the players in this 1 Act Play:
- 3 Large cherry tomatoes, sliced.
- 1/2 green pepper, sliced.
- 2 TBS chopped onion
- 1 small pc. Tofurky, chopped
- snipped chives
- about 1 oz blue cheese crumbles
Put about 1/2 TBS olive oil in fry pan and heat on med-hi.
Add veggie mix. Saute 1 min. Add Tofurky and chives. Cook about 3 min. Add E/Beaters and turn heat to med. In about 2-3 min. gently pick up sides of omelet to let loose eggs get underneath to meet the heat of the pan. Sprinkle on cheese, turn off heat, fold omelet, let cook an additional 1 minute. Turn onto plate. I topped the omelet with a few shakes of hot sauce and 1 TBS salsa. It sits on top of a homemade english muffin.
Now Shane and I are off to AT&T to get a new cell phone, Peter’s Cornucopia for some wholesome foods.
