This and Thats:

News from MJ in Vegas:  Mary Jane told us to check out Las Vegas weather today and this was the report:  Measurable snowfall is expected to greet Las Vegas Valley residents today for the first time in more than five years, according to the National Weather Service.  Bummer.

As for the news on the Joanne and Ted down-n-out dishwasher… it’s still out. We need parts. So now there is a giant hole in the appliance where the guy ripped out the panel so we could at least get the dirty dishes out to clean (phew!).  I don’t want to be disgusting, but they really didn’t smell which I thought says a lot about our “clean dirtiness”  or moreover, indicates something positive about my cooking residues.  

Gotta brag a bit:  I won a Certificate from http://www.fitnessfig.com  Check out the site. Ya HOO!

Food Talk

I was not too upset about having to take Shane home at lunch time. The little beast decided to start barking at everyone.  Speaking of lunch, I made my usual spinach salad, using the Maple Fig dressing and topped it with Starkist Marinated Tuna:

Ted was in charge of his own dinner tonight since he opted for beef. I focused on a deluxe vegetable dish as follows:

  • 2 large zucchini, cut in half then sliced length wise. Discard the outer portions with peel on them.
  • 1/2  of a 24 oz jar of Salsa
  • 2 plum tomatoes, sliced length wise.
  • 1 green pepper, thin sliced
  • 1 4oz pkg. Goat cheese
  • Parmesan cheese
  • Basil and Salt and Pepper to taste.

Preheat oven to 425 F.  Line 9 x 13 pan with foil and put some salsa on bottom to coat. Put your first layer of zucchini on the salsa, then a sliced plum tomato, now your sliced peppers. Sprinkle the basil, salt, pepper and crumble half the goat cheese on top. Add more salsa, zucchini, tomato, pepper, basil, salt, pepper, ending with the rest of the salsa, crumble the cheese, sprinkle the parmesan and bake for 35-40 min. loosely covered with foil. Remove cover and let cook 10 more minutes.  You don’t want soggy veg. They want to remain nice and crisp. Lots of flavor.

It’s a wonderfully mild morning in Upstate. 38 degrees.  The bad part about that is that the snow is melting and it’s ugly out there. There are so many puddles,  and the roads are mucky, there’s also a little bit of ice in places so you really have to watch your step.  I found out all this when Shane and I went for our walk.  But we’ll take it back a bit to the indoor workout.

The morning began with a VPX preworkout shake which took me through a good 45 minute 5 + mile treadmill run.  I worked my back and triceps today. 12 to 15 reps x 4 sets of each exercise.  4 exercises for the back and 4 for the triceps. This took about 35 minutes. Shane and I went out for about 45 minutes but we hit the track on the way home to toss the frisbee about in the dark.  The MVCC track wasn’t cleared of snow so no one was walking.  I decided it couldn’t get any worse trudging through the snow on the track since I stepped in a HUGE-O puddle along the road. I was wearing my fav. Merrills for winter running and it turns out, they are pretty much water proof.  My socks are not.

Breakfast

  • Cream of rice
  • Apple pie spice
  • 1/8 cup Stonyfield Farms Organic F/F plain yogurt
  • 1 scoop VPX mixed with 3 oz raspberries and 1/8 cup S.F yogurt.

I also nibbled on some trail mix before leaving the house …feeling nutty. 

I’m taking a few minutes here at work to do my AM blog and guess who is puttin’ in some hours?…

shane-at-workYou guessed it! Shane!  That’s a disgusting knuckle bone he has on his “park it ” rug. Looks kind of like a big chewed apple doesn’t it?  Anyway – he’s here because the dishwasher repair guy is coming a day early – yippee!  We thought the guy would rather repair the appliance without a dog in his face.
