Instead of little love notes, this is the email I get from my hubby.  We obviously focus way too much on the dog!  But that has nothing to do with good eats so, we’ll move along…

Late Lunch

It was one of those days, so I didn’t get lunch until close to 1pm.  My snack held  me over.   Oikos, nuts and raisins.

oikos-and-trail Since there wasn’t much time when I got home to start chopping salad veg., I decided on left overs. Ted had just made brown rice, so that couldn’t be passed up.

I heated the left over Tiered Trio of Vegetables plus a cup of the 13 bean chorizo, added 1/4 cup of rice and enjoyed the warm meal on a cold day.

13-bean-chorizo-and-tiered-trio-veg  The picture is a bit of a blur. Could have been the result of 2 things: 1. Shane was nosing at my arm for attention. 2. I was in a rush since I had to eat and run.  Considering it was a rushed meal, it hit the spot.

Dinner came late tonight.  I cooked a butternut squash in the microwave for 15 minutes.  Cut into 4’s and place cut side down in a microwaveable dish, add a little water. Set microwave to high and let it go for about 12 – 15, depending on the size of the squash and the power of your oven.  We don’t add anything to the squash, simply mash it. It carries so much natural flavor and sweetness, why mess with nature?

We had soup and poached eggs with the squash.  I poached the eggs the old fashioned way using boiling water, vinegar, a little salt.  Added one egg at a time, when cooked, put it in hot water to rinse off the vinegar and served with the squash and soup.  Ted was a 4 egg man tonight and I can only eat one whole egg – my preference is not to eat whole eggs at all but that wasn’t an option tonight.

What’s all the to do?

Ok so now this Almond Torte I’ve been working on.  Finished! Yes- Done!  I have a few of them because it is an experiment in perfecting the recipe.  On Sunday, we gave our friends two out of the first test group.  I’m hoping for some honest feed back.  Tomorrow, we have 2 more to distribute and then 3 more going out at the end of the week.

They are kind of fun to make, a little time consuming, but I think it’s going to be a great holiday treat.  We’ll have to see. I’ll treat you to the end result photo and then within the next week or so (maybe tomorrow) I’ll be posting the instructions for anyone to try. But you have to tell me what you would do different!

  The other wonderful thing about these almond tortes, the house smells HEAVENLY when they are baking.

That’s all for now – I’m off to watch “House” – hope it’s on tonight? Nighty night.

Helpful hints for selling at a Green Market

If anyone can offer any tips/hints/suggestions… or need to knows for selling food products at a Green Market in FL, please be so kind and let us know.

Tuesday’s post

Began the day dragging myself downstairs. I had a VPX shake, choking it down. I wasn’t in the mood at all.  Running was out of the question today so I did 35 minutes on the ET while watching “How To Boil Water”.  I then switched to a dreaded leg workout, turned the channel on the TV to the news and got with it.  That must have been when my body decided to give up the argument and just get with it.  I had a good leg workout – 45 minutes as follows:

  • 4 sets x 12 reps. of everything.
  • Squats using long 45 lb bar w/ weights added + Leg ups on a bench.
  • Hack Squats + Dead lifts
  • Leg curls + Side lunges*  This is where the “curtsy” comes in.  The side lunges I did today went like this… step to the left with your left leg, step your right leg behind your left and bend your knees to dip, ….CURTSY.  Do the same on the right.  You will REALLY feel this on the side of your glutes. Great exercise – beware!
  • Leg extensions + seated calf raises.

Shane and I then took a 2.3 mile walk.

Breakfast was  1 scoop Jay Robb + 3 oz Raspberries + 1/4 cup FUZE.  Hot cereal was 1/3 cup Silver Palate Thick & Rough Oats + cinnamon + 1 chopped date. For my fruit, 1/2 a grapefruit.

It may be a busy night tonight so I’m not sure what dinner will be. We might be simply ordering a pizza.
