I have to share this and let you know how amusing animals can be.  We have a little stuffed horse, and if you squeeze it’s ear, it will snort, moves its head, tail, and makes sounds like its galloping away.  Shane has typically barked like crazy at this thing. Well this week, he discovered how to make it come to life. He gently nudges the ear with his nose. It starts up and he leaps back with his ears up. Sometimes he barks and sometimes he just looks at it. Such a smart little guy!

Lunch

I did manage to navigate the roads successfully today and made it home for lunch with my two guys.  It was a standard lunch and kept me going for the afternoon.

Dinner from stove top to oven

We had a Seafood Frittata tonight. I used claw crab meat and Maine lobster meat.  Makes about 8 slices.

  • 2 TBS Olive Oil
  • 1/2 Onion, chopped
  • 1/2 cup chopped asparagus
  • 1 tsp Minced Garlic
  • 7 oz Lobster meat
  • 16 oz Crab meat
  • 1 TBS + lemon juice
  • 8 Mini Portabella Mushrooms, peeled & sliced
  • 1 1/2 Cup EggBeaters
  • 3 Whole Eggs
  • 2 TBS Fresh Dill
  • 1/2 tsp Old Bay Seasoning
  • 1/4 tsp Red Pepper Flakes
  • 1/2 tsp each: salt, pepper
  • 1 TBS Hot & Sweet Honey Mustard
  • 1/4 cup Parmesan cheese
  • 1/2 cup 50% Reduced Fat Cabots Shredded Cheddar (fresh grated would be best.

Preheat oven to 375 F.  Saute the onion in olive oil, in a pan you can put directly into the oven.  Add the asparagus and garlic and saute a minute or two more.  Add your  lobster, crab and add your lemon juice. Add your mushrooms and Old Bay and let cook about 3 minutes, med-high.  Mix your Beaters with your eggs, dill, red pepper, mustard, Parmesan, salt and pepper.  Remove the pan from the heat and add your egg mixture.  Sprinkle your cheese on top. Place in the oven about 20 minutes.  Remove and let sit 5 minutes before slicing.

Served over Honey Mustard Broccoli Slaw and Microwaved Mashed Acorn Squash.

Honey Mustard Broccoli Slaw – mix all the following together and chill until ready to serve.

  • 3/4 cup Broccoli Slaw
  • 1 tsp sweet hot honey mustard
  • 1 tsp honey
  • 1 TBS Zesty Italian Dressing
  • Dash of Worcestershire sauce. 

Winter storm warning tonight. We were going to Dick’s Sporting Goods since Ted wanted some additional 45 lb weights, but don’t think we want to deal with driving in the mess that’s going on out side.  We have a movie and will most likely watch it with great hopes that our eyes remain open throughout.  Have a good night.

When I got back from our walk this morning, I was sure my face would have hundreds of blood dots on it. The ice falling from the sky was like sharp little needles (again!).  We had to strategically plan our walk away from the East where the wind seemed to be coming from and consequently driving the freezing rain into our eyes and faces.  We managed a 2 1/2 mile walk in about 35 minutes. The roads weren’t that slippery.  The rest of today’s weather report: BAD!

Today’s nourishment went a little like this.

  • 1 scoop of VPX (pre-workout)
  • 1 scoop of VPX + 2 strawberries + 1/4 cup FUZE
  • 1/4 cup Cream of Rice + 1 TBS Buckwheat Groats + 1 tsp Pumpkin Spice + 1/4 cup vanilla non fat soymilk + 1 tsp Naturally More P-Nut Butter.

The workout: Chest and Biceps  4 sets each x 12 -15 reps.

  • Incline bench press, long bar + Hammer curls
  • Incline flies + Curls using rope on cable machine
  • Standing flies + Concentration curls
  • Standing chest press + Bar curls
  • 25 V ups for abs.
