Mustard BQ Chicken Breasts or Quorn

This dinner smelled really good while cooking. The mustard and barbecue sauce gave off aromas which reminded me of chicken wings on a summer picnic.  This recipe idea came from the Hannaford’s Fresh magazine I picked up at the health expo.  You may be able to find the original and others at the Hannaford site.  I offer my version here and keep in mind, all you Vegetarians, I used Quorn Naked Chicken breasts.  For my husband, we used 4 boneless chicken breasts, flattened with a mallet to make them thin.

  • 1/4 cup Barbecue Sauce – your favorite
  • 1/4 cup mustard – your favorite
  • 2 TBS olive oil
  • 2 TBS Greek yogurt
  • 1 tsp minced garlic
  • 1/4 tsp cayenne pepper – use as much or as little depending on how hot you like it
  • 4 boneless chicken breasts or 4  to 6 QUORN naked cutlets
  • 1 1/2 cups panko* or regular bread crumbs
  • celery and  low fat ranch dressing on the side

Preheat oven to 425 F. Mix the first 6 ingredients together and put in a large food bag.  Add your chicken/quorn and let marinate for 15 minutes.  Spray a foil pan lined with foil with non stick spray.  Put the crumbs in a dish so you can coat the chicken/quorn.  Remove the meat/pseudo meat, and coat with crumbs, place on foil lined pan.  Bake 15 minutes.Turn over and cook an additional 10.  If using Quorn, bake 10 minutes, turn and cook another 5 – 10.

Serve with Rainbow Cauliflower

  • One head of cauliflower, steam until tender.
  • 1/2 each of a red, orange/yellow, green bell pepper – thin sliced

Preheat oven to 350 F.  Put cooked cauliflower in baking dish. Top and toss with pepper slices. Pepper and salt to taste. Add a sprinkle of dill and bake for 20 – 30 minutes.

*The Japanese refer to bread crumbs as “panko”.  They make it differently than we make our bread crumbs.  A softer, more tender bread is used and only the centers – no bread crust. This will result in a more crunchy, lighter texture. 

This morning, the news was reporting that on this day, we celebrate the anatomically impossible Barbie Doll birthday.  Now, I have a calendar that indicates it was a few weeks ago!  Good thing I didn’t pay for that calendar. Makes me wonder when it will indicate we should be celebrating Easter?!!!! 

That’s it for this Monday. This week, for us superstitious people, Monday should be better than Friday because…oooh WhOOO  ohhhh (making eerie noises)…. it’s FRIDAY THE 13th!!!!!   Spooooky!   Scare you:9599
