Sometimes when grilling our meals, even though care is taken, we end up with a really dry piece of fish or meat .  Instead of admitting defeat and feeding the “shoe leather” to the dog (although the dog really wouldn’t mind), try topping it with this recipe for a dried fruit sauce.  The recipe was adapted from the June/July 2009 issue of “Cooking Pleasures“.

Dried Fruit – Wine Sauce for Grilled Meats and/or Fish (6 servings)

  • 1 1/2 cups Red Wine
  • 1 cup Vegetable Broth
  • 1/2 cup onion, diced
  • 1/2 cup dried mixed fruit, diced (use your favorites)
  • 2 TBS SmartBalance (or use butter) – softened
  • 3 tsp flour

Mix the first three ingredients in a large pan over high heat.  Cook for approximately 15 minutes to reduce by half.  Add the dried fruit. Reduce heat to low, and continue at a simmer for 8 – 10 minutes. Fruit should be softened.

Combine the butter and flour and stir into the cooking sauce. Cook until thickened slightly – approx. 2 -3 minutes.  Spoon over grilled entree.

Tonight is our last night to enjoy the company of Mary Jane and Angelina.  They have been busy, running around visiting family and friends. We hope  their stay has been enjoyable?  Being from Las Vegas, they thought the weather was a bit cool at times but at least there was no rain.

Monday Morning Back To The Gym:   I did work out last week, it was just so busy that AM hours didn’t allow blog time. This week, if all goes well, my routine and AM healthy eats will be posted. 

Warm Up:  3.4 mile treadmill run.

Working Chest and Biceps: 

  • Chest work out: First set is a warm up, 3 sets using heavy weights and last set back to warm up weight. Total of 5 sets x 12 reps.: 1. Incline bench press. 2. Incline dumbbell press. 3. Incline bench flies. 4. Cable Pec Press.
  • Bicep workout: 4 sets x 12 reps. 1. Cable curls,one arm. 2.Rope curls. 3. Hammer curls. 4. Bicep curls, 2 arm.

Post Workout:  3.45 mile jog/walk with Mister Shane.

A healthy choice of eats…
