A Kiwi Surprise..
This month’s Harry and David delivery is Kiwi fruit. It is formerly known as the wild Chinese Gooseberry. They should be quite soft when ready to eat. You can store in the fridge for about 2 weeks. Simply peel and enjoy. The shipment came with a Kiwi Berry Muffin recipe so be on the look out in future posts.

Second item of the night is Lentils. Dinner tonight was Lentils in Spicy Tuscan Sauce with Asparagus and Egg on the side. Serves 4
- 1 cup dry lentils -rinsed
- 1 3/4 cup water
- 1 cup Your Favorite Tomato Sauce (I used a spicy Tuscan sauce)
- 1 TBS olive oil
- 1 bunch asparagus – use the upper half (tender portion) of the asparagus and chop into bite size pcs.
- 1/2 cup water, if needed
- salt and pepper to taste
- 1 TBS olive oil
- 6 Baby Bella mushrooms – peeled and sliced
- 4 Egg whites – or use 4 whole eggs if you eat the yolk
- 1 tsp Adobe seasoning
- 1 tsp Epazote
In a saucepan, boil the water and add lentils, stir. Turn off the heat, cover and let sit 40 minutes. Add the tomato sauce, oil, asparagus, more water if needed. Turn heat to simmer (low) and let heat for 20 – 25 minutes until asparagus is JUST tender. Taste and add salt and pepper if necessary.
In a saute pan, add 1 TBS olive oil. Heat on medium. Add mushrooms, sprinkle with Adobe and cook 5 minutes. Push to the side and add eggs. Sprinkle Epazote on eggs and cook to desired doneness.
I didn’t enjoy this movie. It was about a couple trying to break away from reality to pursue dreams from when they were younger. There is fighting and swearing and …just not relaxing, enjoyable “take me away” kind of content. Not my type of movie. Ted stayed awake through the entire movie, 118 minutes. That says something.
