Summer Vegetable Skewers

Fire up the grill and get ready to feast on some fresh tasting, eye pleasing summer fresh veg.  Use what you like and enjoy the fruits of the land.   Here is a very easy dish that compliments the warm summer weather.

  • 8 wooden skewers – soak in water for at least 10 minutes
  • 1 Bell Pepper – use green or red or orange…make it pretty. Chop into 16 chunks
  • 1/2 large onion – chopped into 8 large chunks
  • 1 yellow squash – chop into 24 – 32 chunks
  • 16 grape tomatoes
  • 8 Baby Bella or other Whole Mushroom
  • 2 – 3 TBS Your Favorite Italian Dressing

Heat grill on high.  After you have done all the chopping, assemble the skewers using 2 pieces of pepper, 1 piece of onion, 3 – 4 pieces of squash, 2 tomatoes, 1 mushroom.  Baste with your favorite dressing. When hot, the veggies can be placed right on the grill. Rotate about 4 times for a total of 8 to 10 minutes of cooking.   Picture show to follow….

It’s off to save the flowers from the heat of the day. A good watering will please them for sure.  Have a great night and make sure you let me know what you think of Grilled Veggie Skewers!
