1 Cup WARM WATER
3 TBS brown sugar — Separate 1 tbs out
1 tsp salt
2 cups whole wheat flour
1 cup all-purpose flour
1 1/2 tsp yeast
1/2 TBS canola oil
1 TBS blackstrap molasses
Put the water, 2 TBS brown sugar, salt, flours, and yeast into your bread
maker basket (put a pinch of sugar on top of the yeast, and set for dough
setting. About 1.2 hours.
After it is done, put dough ball on counter, make a “pool” in the middle and
add 1 TBS brown sugar, 1/2 tbs oil, 1 tbs molasses. Knead dough for 3
minutes.
Cover dough ball with cloth, wax paper, or plastic and place it on a sheet,
into the oven. Set oven to 150 Deg. but turn it off again after 2 minutes.
It may not be up to heat, that’s ok. Don’t open the door, just let it sit
for at least 30 min.
Separate dough into 12 pcs. Roll out to about 5 – 6 ” and turn into a donut.
Let rest again on countertop 30 min.
Boil 2 Qt. water with 2 TBS maple syrup added. Preheat oven 400F.
After bagels have rested 30 min., drop into boiling water for 2 min. per
side. Remove with slotted spoon and let sit on wire rack while you boil the
rest. After all boiling is complete, remove to either foil lined, parchment
line, or I used Silpat lined baking sheets.
Brush with egg white and bake 20 min. til brown.
