- 1 1/4 lb Salmon Fillet
- 1/2 large Lemon
- 1 tsp Old Bay Seasoning
- 1 tbs Dill Weed
- 1/2 tsp sugar in the raw
- Smart Balance and/or olive oil (I used the tub form and the spray form of Smart Balance).
- 1 lb Fresh Brussel Sprouts (slice off ends and make a “+” slit in the bottom of each sprout)
- 1 tbs sesame seeds
- 1 tbs Smart Balance (or butter)
- 1 tsp salt
- 1/2 tsp paprika
Lay the salmon skin side down in a glass/ceramic dish to marinate. Squeeze the lemon all over the fillet. Sprinkle with the Old Bay and Dill, then the Sugar. Marinate for about 45 min. to 1 hour.
In the meantime, prepare your brussel sprouts. Cover with water and bring to a boil for 8-10 minutes. Once they are tender, set temp. to low/simmer and add the Smart Balance, sesame seeds, salt, paprika – stir around and let SB melt. Keep warm until salmon is cooked.
Preheat oven broiler on Hi and set rack about 4 ” from heat coils. Remove salmon from marinade dish and put in foil lined alum. foil pan. Spray bottom of pan with SB or Olive oil, sprinkle with dill and lay salmon in flesh side down (skin is visible to broil first). Spray with SB or olive oil, sprinkle with salt and pepper and broil about 6 min. for a thick fillet (about 1″ thick). Carefully remove and turn salmon over, spray w/ SB or olive oil and broil for about 4-5 minutes longer.
Serve with brussels.
*You might also add a few spears of asparagus in with the salmon during the last 4-5 minutes of broiling.
