Preheat oven to 425F.
- 1 8oz pc. of salmon
- 2 TBS white wine
- 1 chopped shallot
- 1tsp dill
- the juice of 1/2 a lemon
- sprinkled with salt and pepper to taste
Place salmon in baking dish and top with all ingredients. Cover with aluminum foil and bake about 15 – 20 minutes.
A great accompaniment would be brussel sprouts (boiled about 10 minutes until tender and sprinkle with salt and pepper to taste) and green beans (boil about 6 minutes with some dried onion, salt,pepper to taste).
You know what I have been doing lately with green beans – sprinkling them with salt & pepper & olive oil & broiling them until crispy – this is absolutely delicious, you have to try it!!
