- 5 lbs red potatoes, washed and sliced to about 2 x 2 pcs.
- 1/3 cup olive oil
- 3 tsp minced garlic
- 2 Tbs fresh rosemary
Preheat oven to 350 F. In large bowl mix olive oil, garlic, rosemary, salt and pepper to taste. Add the potoato pcs. and toss. Layer in a long large oven proof pan, bake for about 45 min – 1 hour until tender when pierced with a fork.
